Zea Z-Lightful Shrimp Lettuce Wrap
Ingredients
- To make the lemon brined shrimp:
- Fresh 40/50 shrimp
- 1 gallon water
- ½ gallon ice
- ½ cup lemon juice
- ¼ cup salt
- To make the olive mix:
- 2 teaspoons Green onions
- 2 tablespoons Calamata olives
- 2 tablespoons Green olives
- ¼ cup Feta Crumbles
- ¼ cup Extra Virgin Olive Oil
- 2 tablespoons Sundried tomatoes
- 2 tablespoons Diced tomatoes
- To make the spicy red pepper hummus
- 1 cup of your favorite hummus
- 2 tablespoons Sriracha
- To assemble the gulf shrimp lettuce wraps:
- 2 Romaine Lettuce Leaves – 5 inches long
- 1 Tablespoon Spicy Red Pepper Hummus per lettuce wrap
- 1 Tablespoon Olive Mix per lettuce wrap
- 1 oz. Lemon Brined Shrimp per lettuce wrap
- 1 teaspoon Feta Crumbles per lettuce wrap (as a garnish)
Instructions
- To make the lemon brined shrimp:
- Bring ½ gallon of water to a boil and add 1 lb of fresh shrimp and bring back to a boil (approx 5-7 minutes)
- Drain shrimp into a colander and immediately stir shrimp into a ½ gallon brine solution of water, ice, ½ cup lemon juice and ¼ cup salt
- Drain the shrimp as soon as they are cool. Do not allow them to sit in the brine solution.
- To make the olive mix:
- Thoroughly mix all ingredients with a rubber spatula
- To make the spicy red pepper hummus:
- Mix thoroughly with a wire whisk
- To assemble the gulf shrimp lettuce wraps:
- Spread 1 tablespoon of spicy red pepper hummus along each lettuce leaf.
- Spread 1 tablespoon of olive mix along each lettuce leaf.
- Spread the shrimp along each lettuce leaf.
- Sprinkle the feta crumbles over each leaf.
